Located in Colombé-la-Fosse in theAube region, Laurent Courtillier ‘s domaine welcomes you to discover its many champagnes, visit its cellar and take part in tastings. Created in 1994 and located in Colombé-la-Fosse, our estate is situated in the AOC (Appellation d’Origine Contrôlée) Champagne vineyards. Laurent Courtillier, now at the head of the estate, learned the winegrowing trade from his father Raymond. Accompanied by his sons Maxime and Théo, Laurent Courtillier continues to share his know-how and passion by creating top-quality champagnes. Located on the Côte de Bar, our vineyard covers 10.5 hectares and is composed exclusively of three grape varieties: Pinot Noir, Pinot Meunier and Chardonnay. Today, champagne production must be environmentally friendly. That’s why our estate is certified as an Exploitation de Haute Valeur Environnementale (Level 3) and Viticulture Durable en Champagne.

Laurent Courtillier is a passionate winegrower who has been involved in Champagne vine growing for many years. It is now proud to have obtained its Viticulture Durable en Champagne certification, as well as the Exploitation de Haute Valeur Environnementale (HVE) certification.
Viticulture Durable en Champagne certification is a guarantee for consumers that the wines produced in Champagne have been cultivated with respect for the environment. To obtain this certification, winegrowers must meet rigorous criteria in terms of respect for the environment, biodiversity and water management. Exploitation de Haute Valeur Environnementale certification is also awarded to winegrowers committed to sustainable agriculture. This certification includes additional criteria, such as soil management, reduced use of chemicals and preservation of natural habitats. These certifications testify to our sincere commitment to sustainable and environmentally friendly viticulture. Champagne is a sparkling wine produced exclusively in the Champagne region of France. Champagne production is a complex process involving several crucial stages. First of all, Champagne growers cultivate three types of grape: Pinot Noir, Pinot Meunier and Chardonnay. These grapes are hand-picked and carefully sorted to keep only the best. The grapes are then pressed to extract the juice. The juice from the first press, called “cuvée”, is considered the best and is reserved for the production of high-quality champagne. The final blend, known as a “assemblage”, is created from different tank wines to obtain the optimum taste. The champagne is then bottled with a small amount of sugar and yeast for secondary fermentation. Aging is an important stage in champagne production. Champagne must be aged in the bottle for at least 15 months before being sold. Our best champagnes can age for several years in our cellars. Finally, disgorging is the process of removing yeast sediment from the bottle. The cork is removed from the bottle and the champagne is quickly recorked with a new cork. Champagne production is a long and meticulous process that requires a great deal of care and attention to produce a top-quality wine.
